Want to hear a joke about pizza? Never mind, it’s too cheesy

What if I asked for your thoughts on a pizza base made solely from grated cauliflower, ground almond and egg? If they were anything other than “OMG that sounds insanely good” then you’d be totally and utterly wrong. That’s EXACTLY what it was… Insanely good.
This was my first attempt at a Paleo pizza base and I was thoroughly ecstatic at the outcome!

Ingredients (for base)
One whole head of cauliflower
Two eggs
Two tbsp of ground almond

Method
Grate the cauliflower, add eggs and almond and mix together with your hands. One it has all stuck together spread it out (in a pizza shape ideally) on a sheet of baking paper on a tray. It should only take about 15 minutes to cook but you’ll know when it’s ready for the toppings.

Ingredients (for topping)
A pack of large vine tomatoes
Basil
Ground onion
Spinach
Red onion
Sweet red pepper
Goats cheese

Method
First off you need to dice the tomatoes up as small as you can and put them in a pan with coconut oil, ground onion and basil and start heating them up. This, if you hadn’t guessed already, will be the tomato sauce (minus all the additives).
Once the sauce is done you can then spoon on to the pizza base and spread it out.

You can now add your toppings of choice. If you’re more a pepperoni or a ham and pineapple you fill your boots.
I chose the before mentioned toppings and if you’re going with mine then I’d advise you part cook the spinach before adding to the pizza.
As soon as everything has been added you can now put back in the oven for approximately 20-30 minutes.
Hopefully you’ll end up with something a little like this…

Now I know this isn’t strictly Paleo but you simply cannot have pizza without cheese. It’s just not ok.
